Summer Bean Salad


Just in case you are going to a party for the Fourth and you need something perfectly portable and healthy!

Ingredients:
1 can Great Northern or Canneloni Beans (rinsed and drained)
1 package of whole wheat Israeli couscous
1 cucumber
tomatoes (a pint of cherry or grape, or one big beefsteak or anything in between)
3 Tablespoons olive oil
1 Tablespoon balsamic vinegar
Juice from 1 lemon
1 Cup chopped fresh parsley
8oz crumbled feta cheese

1.  Prepare Israeli couscous according to package directions.  Allow to cool slightly.
2.  Put all the ingredients in a large bowl and mix.  You can serve at room temperature right now, or chill for an hour up to 1 day and serve cold.

Easy peasy,  and delicous!  Have a Happy Fourth of July!!!
